Invert Sugar IN03 is a brewing syrup produced through the controlled inversion of sucrose, where the disaccharide is split into its constituent glucose and fructose monosaccharides. The IN03 grade corresponds to the traditional British No. 3 invert sugar, a darker syrup of approximately 60-70 L that contributes a deep reddish-brown colour and rich, complex flavour notes including toffee, dark fruit, and light caramel. It is supplied as a thick, ready-to-use liquid syrup that adds directly to the kettle without preparation.

This product works on multiple levels. As a fermentable, the inverted sugars are readily taken up by yeast without the need for the cell to expend energy breaking down sucrose, which historically was thought to contribute to better yeast health across pitch generations. The Maillard and caramelisation reactions developed during the inversion process contribute distinctive flavours and colour that cannot be replicated by simply adding cane or beet sugar to the boil, making invert syrups an essential ingredient in authentic recreations of traditional British and Belgian styles.

Invert Sugar IN03 is most associated with British dark milds, brown ales, porters, old ales, and barleywines, where it provides depth and character that complements the malt bill without the astringency that can come from heavy use of dark roasted grains. It is also a strong choice for darker Belgian styles such as dubbels and quads, where it can substitute effectively for darker candi syrups (D-45 to D-90 equivalent). Typical usage is in the range of 5-15% of total fermentables, though higher rates are used in some traditional recipes. Add at the start of the boil for full integration or split additions across the boil and fermentation for layered character.
