Brewhouses
Industrial Brewery
The Industrial Brewery range is a large-scale, fully automated brewhouse engineered for high-volume, consistent wort production. Built to the exacting standards demanded by commercial brewing operations, the system integrates advanced mashing, lautering, boiling and hop addition technologies into a coherent, highly automated process. Every stage is designed to maximise throughput, extract efficiency and product consistency.
Available from 50 to 1,000 hectolitres and in four, five or six vessel configurations, the range is specified to suit the operational demands and batch cadence of industrial brewing facilities. With throughput of up to 12 batches per day achievable, the system is built to perform at scale without compromise.
TECHNICAL DETAILS
Process Description
Grain is introduced to the mash mixer, where low-shear, frequency-controlled agitation delivers accurate, consistent mash temperatures and liquor-to-grist ratios while optimising energy use throughout.
The converted mash passes to the lauter tun, where a multi-loop collection system ensures uniform wort flow across the grain bed, maximising extract yield. An automatic umbrella-pattern feed valve distributes grain evenly, and full automatic control of lautering and sparging — including temperature, flow, pressure and real-time turbidity monitoring — ensures repeatable, high-quality runoff with minimal operator input.
The wort is boiled under a dynamic low-pressure process, using flash evaporation to drive vigorous boiling throughout the kettle. This accelerates protein and polyphenol polymerisation, promotes reductive substance formation, and drives off undesirable volatiles including dimethyl sulphide to below 10 ppb. External forced circulation replaces steam-driven wort movement, creating a uniform evaporation surface and cutting energy consumption by over 25%.
Hops are added via a dedicated automatic system with a bottom-in, top-out flow path, post-addition pump drainage and hot water rinse — ensuring hygienic, consistent dosing with no manual handling required.
Throughput & Efficiency
-
01
High batch cadence
Mashing capacity matched to 8–12 batches per day, with lautering capability of up to 12 batches per day, enabling maximum utilisation of fermentation capacity.
-
02
Shortened cycle times
Dedicated vessel separation at each process stage minimises occupation time, allowing the next batch to begin before the previous one is complete.
-
03
Energy savings
Dynamic low-pressure boiling combined with external forced circulation reduces energy consumption by over 25% versus conventional boiling methods.
Process Control & Consistency
-
04
Precise mash control
Low-shear, frequency-controlled mixing delivers accurate temperatures and liquor-to-grist ratios at every stage, for a predictable and repeatable wort.
-
05
Fully automated lautering
Automatic control of temperature, flow, pressure and turbidity throughout lautering and sparging ensures consistent extract yield with minimal operator input.
-
06
Wort quality assurance
Dynamic boiling drives DMS and other off-flavours to reliably low levels, with protein and polyphenol management built into the process.
Hygiene & Reliability
-
07
Dead-zone-free design
Large-diameter lauter tun construction eliminates hygiene dead zones, and automatic spent grain discharge removes the need for manual grain handling.
-
08
Automated hop addition
Fully enclosed, automated hop dosing with integrated drainage and hot water rinse ensures hygienic, consistent addition without manual intervention.
-
09
High-specification components
Internationally recognised sensors, instrumentation and control components ensure operational resilience and straightforward access for maintenance.
Available configurations
-
Four Vessel System
A mash mixer, mash tun, brew kettle and whirlpool vessel. The baseline Industrial Brewery configuration, providing full separation of mashing, lautering, boiling and whirlpooling stages. Suited to facilities requiring high-volume output with a straightforward vessel layout and robust automation throughout.
-
Five Vessel System
A mash mixer, mash tun, lauter tun, brew kettle and whirlpool vessel. The addition of a dedicated lauter tun separates lautering from mashing, allowing the mash vessel to turn around for the next batch while wort extraction continues. This significantly increases daily batch capacity and is well suited to operations running multiple brews per shift.
-
Six Vessel System
A mash mixer, mash tun, lauter tun, holding/buffer tank, brew kettle and whirlpool vessel. The inclusion of a dedicated wort buffer tank decouples lautering from boiling, absorbing any timing variation between stages and ensuring the kettle is never waiting on runoff. This configuration is designed for operations pushing the upper limit of batch cadence, where every vessel's occupation time must be tightly managed to sustain throughput at scale.
