Kombucha
Kombucha Brewhouse
The Kombucha Brewing System is a multi-stage processing solution designed for controlled production of fermented tea beverages at commercial scale. The process begins with preparation of sweetened tea in a brewing vessel, followed by controlled cooling and transfer into dedicated fermentation tanks, where SCOBY cultures drive primary fermentation over defined time cycles. The system integrates stainless steel vessels, heat exchange, and transfer systems to ensure hygienic and repeatable operation across batches.
It is suited to both craft and industrial kombucha production, where consistency, hygiene, and fermentation control are critical. Advanced configurations support temperature management, pH monitoring, and CIP integration, enabling stable SCOBY activity and predictable flavour development. With scalable tank sizing, carbonation and filtration modules, and optional automation, the system supports efficient production, quality control, and expansion as demand increases.
Technical Details
Process Description
1. Tea Preparation and Sweetening
The process begins with brewing the tea base and dissolving sugars under controlled conditions before the liquid is cooled for fermentation. This stage establishes the starting composition required for stable SCOBY activity and consistent downstream fermentation behaviour.
2. Fermentation and Process Control
The sweetened tea is transferred into fermentation vessels, where SCOBY culture drives acidification and flavour development over the target cycle. Temperature management, hygienic transfers, and monitoring of key process variables help maintain consistent fermentation performance from batch to batch.
3. Finishing and Packaging Preparation
Once fermentation reaches the required profile, the product can move into blending, filtration, carbonation, or other finishing stages depending on the production plan. This prepares the kombucha for packaging while supporting flavour consistency, microbiological control, and scalable commercial output.
Product Quality
-
01
Controlled Fermentation Environment
Temperature-controlled fermentation tanks maintain optimal conditions for SCOBY activity, ensuring consistent acidification, stable flavour development, and reliable batch-to-batch product quality across varying production volumes.
-
02
Integrated Tea Preparation and Cooling
Dedicated brewing and cooling stages ensure repeatable preparation of sweetened tea, reducing variability at the input stage and supporting consistent fermentation performance and final product balance.
-
03
Consistent carbonation and clarity
Optional filtration and carbonation systems allow precise control of clarity and effervescence, enabling production of both still and sparkling kombucha with stable shelf quality and visual consistency.
Control and Operation
-
04
Automated Process Stages
Integrated control systems manage brewing, cooling, fermentation, and transfer operations, reducing manual handling and improving process repeatability across batches.
-
05
CIP-compatible Hygienic Design
Stainless steel construction with CIP capability ensures efficient cleaning and sanitation, minimising contamination risk and maintaining product safety in acidic fermentation environments.
